One-Pot Pudina Pulao

Ingredients

For the Pulao:

  • 1 cup basmati rice
  • 1 tbsp ghee
  • 1 bay leaf
  • 2 cardamom pods
  • 1-inch cinnamon stick
  • 2 cloves
  • 1 tsp cumin seeds
  • 1/4 cup finely chopped onions
  • 1.5 tsp salt (adjust as per taste)
  • 1 tsp cumin powder
  • 1 tbsp coriander powder
  • 1/2 tsp black pepper powder
  • 1.5 cups hot water
  • 1/4 cup green peas
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped green beans
  • 10-12 cashews

For the Mint Paste:

  • 2 cups fresh mint leaves
  • 2-4 green chilies
  • 4 large garlic cloves
  • 1-inch ginger
  • 2 tbsp water

Directions

  1. Rinse the basmati rice under running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
  2. In a blender, combine mint leaves, green chilies, garlic, ginger, and water. Blend into a smooth paste and set aside.
  3. Heat ghee in a heavy-bottomed pot or deep pan. Add the bay leaf, cardamom, cinnamon, cloves, cumin seeds, and cashews. Sauté for a few seconds until the spices release their aroma and the cashews turn golden.
  4. Add the chopped onions and sauté until golden brown.
  5. Mix in the chopped vegetables and salt. Cook on low flame for about 5 minutes.
  6. Add the prepared mint paste, along with cumin powder, coriander powder, and black pepper powder. Stir well, cover, and cook on low flame until the raw aroma disappears.
  7. Add the soaked and drained rice. Gently toast it for a minute to enhance the flavor.
  8. Pour in 1.5 cups of hot water. Mix everything gently, cover with a lid, and let it cook on the lowest flame for 30 minutes.
  9. Once cooked, remove the lid and fluff the pulao gently with a fork.
  10. Cover again and let it rest for 10 minutes.
  11. Serve hot with a side of raita or yogurt for a delicious meal!
