Ingredients
For the Pulao:
- 1 cup basmati rice
- 1 tbsp ghee
- 1 bay leaf
- 2 cardamom pods
- 1-inch cinnamon stick
- 2 cloves
- 1 tsp cumin seeds
- 1/4 cup finely chopped onions
- 1.5 tsp salt (adjust as per taste)
- 1 tsp cumin powder
- 1 tbsp coriander powder
- 1/2 tsp black pepper powder
- 1.5 cups hot water
- 1/4 cup green peas
- 1/4 cup finely chopped carrots
- 1/4 cup finely chopped green beans
- 10-12 cashews
For the Mint Paste:
- 2 cups fresh mint leaves
- 2-4 green chilies
- 4 large garlic cloves
- 1-inch ginger
- 2 tbsp water
Directions
- Rinse the basmati rice under running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
- In a blender, combine mint leaves, green chilies, garlic, ginger, and water. Blend into a smooth paste and set aside.
- Heat ghee in a heavy-bottomed pot or deep pan. Add the bay leaf, cardamom, cinnamon, cloves, cumin seeds, and cashews. Sauté for a few seconds until the spices release their aroma and the cashews turn golden.
- Add the chopped onions and sauté until golden brown.
- Mix in the chopped vegetables and salt. Cook on low flame for about 5 minutes.
- Add the prepared mint paste, along with cumin powder, coriander powder, and black pepper powder. Stir well, cover, and cook on low flame until the raw aroma disappears.
- Add the soaked and drained rice. Gently toast it for a minute to enhance the flavor.
- Pour in 1.5 cups of hot water. Mix everything gently, cover with a lid, and let it cook on the lowest flame for 30 minutes.
- Once cooked, remove the lid and fluff the pulao gently with a fork.
- Cover again and let it rest for 10 minutes.
- Serve hot with a side of raita or yogurt for a delicious meal!
