  • 1 tbsp salt

  • 2 tbsp dried Italian herbs
  • 1 tbsp chili flakes
  • 1 tsp black pepper powder
  • 2 tbsp oil (for frying)
  • 250g basmati rice, thoroughly washed and soaked in clean water for 30 minutes
  • 2 medium onions, finely chopped
  • 1 tbsp ginger garlic paste
  • Salt to taste
  • 1 tbsp cumin powder
  • 1/4 cup hot water
  • 1 small broccoli, cut into florets
  • 1 large carrot, cut into small chunks
  • 1 cup peas (fresh or frozen)
  • 2 cups hot water
  • Finely chopped coriander leaves for garnish
  • Fresh lime juice for garnish

Directions

  1. Prepare the Rice: Rinse basmati rice under running water until the water runs clear. Soak it in clean water for 30 minutes and set aside.
  2. Marinate the Chicken: Pat dry the chicken with a kitchen towel. In a bowl, mix the chicken with salt, garlic powder, onion powder, dried Italian herbs, chili flakes, and black pepper powder. Let it marinate for 10 minutes.
  3. Cook the Chicken: Heat oil in a large skillet over medium heat. Add the marinated chicken and cook until fully done, flipping once to ensure even cooking. Remove from the skillet and set aside.
  4. Sauté the Aromatics: In the same skillet, add the finely chopped onions and cook until translucent and slightly golden. Stir in the ginger garlic paste and sauté until the raw aroma disappears.
  5. Add Spices and Vegetables: Pour in 1/4 cup of hot water to prevent sticking. Add salt and cumin powder, then mix well. Toss in the broccoli, carrot, and peas, stirring for 2-3 minutes to coat them in the spices.
  6. Combine Rice and Chicken: Drain the soaked rice and add it to the skillet. Pour in 2 cups of hot water and gently stir everything together. Layer the cooked chicken pieces on top.
  7. Cook the Dish: Cover the skillet with a tight-fitting lid and cook on the lowest flame for 30 minutes. Once done, let the dish rest for an additional 10 minutes before opening the lid.
  8. Garnish and Serve: Sprinkle finely chopped coriander leaves and squeeze fresh lime juice over the dish before serving.
