Ingredients
- 4 ripe tomatoes
- 2 large garlic cloves
- 1/2 onion
- 1 1/2 cups water
- 1 cup long grain basmati rice
- 4 tbsp vegetable or sunflower oil
- 2 tbsp finely chopped garlic
- 1 cup finely chopped onion
- Salt to taste
- 2 tbsp Chipotle sauce
- 1 cup boiled kidney beans
- 1 cup corn
- Fresh coriander for garnish
- 1 slit green chilli or jalepeno
Directions

Rinse the rice under running water until the water runs clear.

Soak the rice in water for 30 minutes, then drain and spread it out on a sieve to air dry.

In a blender, combine tomatoes, garlic, onion, and water. Blend until smooth. Set aside.

Heat oil in a large pan over medium heat.

Add the chopped garlic and sauté for a few seconds until aromatic.

Stir in the onions and cook until they start to caramelize.

Add the dried rice and toast it on low heat for about 10 minutes until it turns light golden. Be careful not to over-toast.

Pour in the tomato puree, followed by salt, corn, boiled kidney beans, and chipotle sauce. Mix well.
