  • 1 tsp oil

For the stir-fry:

  • 1 tsp oil
  • 1 tsp finely chopped garlic
  • 2 medium-sized tomatoes, sliced
  • 1/4 cup hot water
  • Salt to taste
  • 2 tsp dark soy sauce
  • 1/4 tsp black pepper powder
  • Spring onion greens, chopped (for garnish)

Directions

  1. In a bowl, beat the eggs with a pinch of salt and black pepper until fluffy.
  2. Heat 1 tsp oil in a skillet over medium heat. Add the beaten eggs and gently scramble them. Avoid overcooking to keep the eggs soft and tender. Set aside.
  3. In the same skillet, add another teaspoon of oil and heat it over medium flame.
