One Pot Prawn Pulao

Ingredients

  • 500g prawns, cleaned and deveined
  • 250g long-grained basmati rice
  • 3 tbsp oil
  • 1-inch cinnamon stick
  • 2 cardamom pods
  • 2 cloves
  • 2 dried red chillies
  • 1 tsp Shahi jeera (cumin seeds)
  • 2 medium onions, finely chopped
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • 1 tsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • ¼ tsp garam masala
  • 1 tbsp Kashmiri red chilli powder
  • ½ cup thick curd, whisked until smooth
  • 2 cups hot water
  • 2 green chillies, slit in half
  • ¼ cup chopped mint leaves
  • ¼ cup chopped coriander leaves
  • 1 tbsp ghee
  • 1 tbsp kewra water
  • 2 tbsp biryani masala

Directions

  1. Rinse the basmati rice under running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
  2. Heat oil in a deep pot over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, cloves, and dried red chillies. Let them sizzle for a few seconds until fragrant.
  3. Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook until the raw smell disappears.
  4. Add turmeric powder, cumin powder, coriander powder, garam masala, and Kashmiri red chilli powder. Pour in a splash of hot water and cook until the oil begins to release from the sides. Then, mix in the whisked curd and cook until the masala is thick and fragrant.
  5. Add the cleaned prawns to the masala and cook for about 10 minutes, until they are almost done. Stir in the chopped mint and coriander leaves.
  6. Add the soaked rice along with the hot water. Stir gently to combine everything. Cover the pot and cook on the lowest flame for 30 minutes.
  7. Uncover the pot and lightly fluff the rice with a fork. Drizzle ghee and kewra water over the pulao, then sprinkle biryani masala on top. Cover again and let it sit undisturbed for 15 minutes.
