- 500g prawns, cleaned and deveined
- 250g long-grained basmati rice
- 3 tbsp oil
- 1-inch cinnamon stick
- 2 cardamom pods
- 2 cloves
- 2 dried red chillies
- 1 tsp Shahi jeera (cumin seeds)
- 2 medium onions, finely chopped
- 1 tbsp ginger-garlic paste
- Salt to taste
- 1 tsp turmeric powder
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- ¼ tsp garam masala
- 1 tbsp Kashmiri red chilli powder
- ½ cup thick curd, whisked until smooth
- 2 cups hot water
- 2 green chillies, slit in half
- ¼ cup chopped mint leaves
- ¼ cup chopped coriander leaves
- 1 tbsp ghee
- 1 tbsp kewra water
- 2 tbsp biryani masala
Directions
- Rinse the basmati rice under running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
- Heat oil in a deep pot over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, cloves, and dried red chillies. Let them sizzle for a few seconds until fragrant.
- Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook until the raw smell disappears.
- Add turmeric powder, cumin powder, coriander powder, garam masala, and Kashmiri red chilli powder. Pour in a splash of hot water and cook until the oil begins to release from the sides. Then, mix in the whisked curd and cook until the masala is thick and fragrant.
- Add the cleaned prawns to the masala and cook for about 10 minutes, until they are almost done. Stir in the chopped mint and coriander leaves.
- Add the soaked rice along with the hot water. Stir gently to combine everything. Cover the pot and cook on the lowest flame for 30 minutes.
- Uncover the pot and lightly fluff the rice with a fork. Drizzle ghee and kewra water over the pulao, then sprinkle biryani masala on top. Cover again and let it sit undisturbed for 15 minutes.
