One Pot Chicken and Mushroom Pasta Recipe

Ingredients

For the Chicken:

  • 500g boneless chicken breast
  • Salt for marination
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp Italian pasta herb mix
  • 2 tbsp extra virgin olive oil

For the Pasta:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp finely chopped garlic
  • 2 medium onions, finely chopped
  • 300g button mushrooms, finely chopped
  • Salt (as per preference)
  • 3 tbsp fresh cream
  • 600ml hot water or stock
  • 250g pasta of choice
  • 1 tbsp Italian pasta dried herb mix
  • 200g fresh spinach leaves
  • Fresh basil leaves for garnish
  • 1/4 cup grated parmesan cheese

Directions

  1. Season the chicken breasts with garlic powder, onion powder, Italian herb mix, and salt.
  2. Heat olive oil in a large pan over medium heat.
  3. Cook the chicken for about 5–7 minutes on each side until golden brown and fully cooked.
  4. Remove from the pan and set aside.
  5. In the same pan, add olive oil and butter.
  6. Sauté the chopped garlic for about 10 seconds until fragrant.
  7. Add the onions and cook until they turn golden brown. Season with a pinch of salt.
  8. Stir in the mushrooms and cook for 10 minutes until they release their juices.
  9. Sprinkle the Italian pasta herb mix and pour in the hot water or stock.
  10. Once the mixture comes to a boil, add the pasta of your choice.
  11. Cover and let it cook on low heat for about 10 minutes.
  12. When the pasta is about 80% cooked, add the spinach leaves and mix well.
  13. Cover and cook until the pasta is fully done.
  14. Stir in the fresh cream for a rich and creamy texture.
  15. Add the cooked chicken back into the pan along with fresh basil leaves.
  16. Sprinkle grated parmesan cheese on top and mix everything well.
  17. Serve hot and enjoy your One Pot Chicken & Mushroom Pasta with a side of garlic bread or a fresh salad.
