  • 1 kg chicken, curry cut
  • 1 tbsp salt
  • 1 tsp black pepper powder
  • 2 tbsp oil
  • 1 tbsp finely chopped garlic
  • 1 cup spring onion bulbs, chopped
  • 1 cup spring onion greens, roughly diced
  • 3 tbsp dark soy sauce
  • 1 tsp black pepper powder (additional)
  • 6-8 whole green chillies
  • 1 large onion, cut into equal-sized pieces
  • 2 green capsicums, cut into equal-sized pieces
  • 1/4 cup cornflour slurry
  • 1 cup hot water

Directions

  1. Marinate the Chicken: In a large bowl, combine the chicken with salt and 1 tsp of black pepper powder. Let it marinate for at least 30 minutes to enhance the flavor.
  2. Cook the Chicken: Heat oil in a wok over medium heat. Add the marinated chicken and stir-fry for 10 minutes until the pieces start to brown.
  3. Add Spring Onions: Stir in the chopped spring onion bulbs and cook for an additional 2 minutes. Lower the flame, cover, and let the chicken cook undisturbed for about 20 minutes or until it’s 90% cooked.
  4. Incorporate Vegetables and Sauce: Add the capsicum, onions, and green chillies to the wok. Pour in the soy sauce and mix everything thoroughly.
  5. Simmer with Cornflour Slurry: Add hot water and the cornflour slurry to the wok. Cover and let it simmer on low heat until the chicken and vegetables are fully cooked.
  6. Season and Garnish: Sprinkle the remaining black pepper powder over the dish. Mix well. Garnish with freshly chopped spring onion greens. Enjoy your Spring Onion Chicken hot with a side of fried rice or noodles.
