Spinach & Garlic Dip – A Great Party Snack!

Calling people over for a house party has a charm of its own. So be it a birthday celebration, an anniversary or simply a weekend, great party snacks always define get togethers!

Don’t worry too much if you have invited your entire fleet of friends! Just make this amazing party snack dip to go along with some wonderful vegetables or chips and see the reaction for yourself! It is extremely simple, healthy and super delicious. Make sure you make a lot of it!

Here’s the recipe.

INGREDIENTS

2 cups of hung curd

2 cups chopped spinach

1 tsp minced garlic

1/2 tsp salt

1/4 tsp Italian herbs

1/4 tsp chili flakes

1/4 tsp pepper

PROCEDURE

  • Heat oil in a pan. Add the onion and garlic and fry for a minute.
  • Add the chopped spinach and fry this.
  • Ensure the excess water evaporates.
  • Set it aside.
  • In a bowl, mix hung curd with salt, pepper, Italian herbs and chili flakes.
  • Add the spinach to this and mix well.
  • Serve with nachos, chips, carrots, and cucumber.

How It All Began – Inspiration Behind the Love for Cooking

I close my eyes to focus more on the situation. I am in the kitchen, not more than three feet tall, watching my father take over the entire space. I watch as he dices the onions and the tomatoes on a beautiful Sunday afternoon, washes the rice, soaks them gently in lukewarm water, and freshly grinds all the coarse spices. I can see from his face that he is really enjoying himself. The house is filled with a familiar scent — a delicate mix of spices and herbs. These are the traces of the start of the inspiration for cooking.

This was the smell that emanated from the house every Sunday afternoon, the smell of pure happiness, the sweet scent of childhood. Even though I was little, I used to love to see my father cook. Every Sunday, he would make an authentic Assamese chicken or mutton curry, along with some amazing pulao, with cashew nuts, raisins, and clarified butter.

My mother, on the other hand, used to be done with the rest of the cooking quite early in the morning. I liked my father more because he would start late and take all his time to prepare the much anticipated weekend lunch, a source of tremendous inspiration to me. As simple as his preparation would be, it would never fail to be absolutely delectable. Even though those times weren’t so abusively divided between weekdays and weekends, I used to look forward to Sundays because of my father’s meals. Almost as much as me and my brother used to look forward to the sweets that our father used to get us whenever he would be home after a business trip (In those days, flying used to be a big deal and airlines used to be very generous with free stuff).

As the cooking process would start, so would my curiosity of witnessing the assimilation of spices. I would be too curious to understand how he is tossing up the vegetables in the kadhai or how long it actually takes for the fried onions to change its color. Since I was too short, I recall my father solving this problem of my unending inquisitiveness by lifting me up and making me stand on murha (a stool made of woven cane, found in north-east India), so that I could observe it LIVE. And I used to take everything in, while he explained the process to me, step by step. I used to do this every Sunday with him, almost like a ritual and for the longest time, till I didn’t need the murha anymore.

A lot of people might argue here as to why am I not saying the same for my mother. Society had made even the seven-year-old me believe that mothers are meant to be in the kitchen. As a child, I would never look forward to the meals cooked by my mother, as they were too ordinary (only now do I realize how delicious and healthy her cooking is, and the reason why I am still alive and have a functional immune system).

I also think it was unique to see my father cook and spend so much time in the kitchen, as it is supposed to be a woman’s job otherwise, something we take for granted. None of my friends ever boasted about their father’s recipes, so it was different for me, a nice different. Most people would laugh about how their fathers don’t even possess the skill to boil an egg or make a cup of tea. I felt proud that my father was self-sufficient that way, even as a child. I was my father’s biggest fan when it came to recipes. And this rage continues till today. Only that now we learn from one another.

Childhood experiences like these have made me realize that I am a simpleton at heart. As much as we might try and assimilate into the city and our work life madness, some of us still enjoy the simplest of things, like a steaming cup of gingered tea on a rainy afternoon, or the simple need of listening to a song with a loved one, or just being comfortably silent and enjoying the moment. I believe when it comes to innovating, simplicity is the hardest to crack. I am trying to do this with my recipes as well. And I want to keep focusing on producing simple recipes using seasonal ingredients, which are as equally relished and craved for, as would a five-star meal.

I am known amongst my friend and family circle as a “domestic” being, someone who would keep her husband very happy. I know it all comes down to being able to feed the husband. Though most of them aren’t serious, it definitely comes across as a big quality to have from an “arranged marriage” perspective. But the fact remains that I love to cook, and I also prefer cooking healthy. Not that I do not have the qualities of a modern woman. In fact, I think I am very empowered in a country like India as I get to decide a lot of things for myself. Having lived alone in a city for so many years, I have now mastered a lot of my own recipes, pampered my friends with food from time to time, and also cooked for myself on days I have felt low. Too bad I don’t have pictures of the weekends in the 90’s. But frankly, I don’t need a physical photograph, as the mental images are still quite clear.

It is from my own roots that I have learned the value of homegrown and seasonal produce. Whenever I go home, I see how our previous generations are so well versed in what to eat, how to prepare traditional meals, and stay healthy as a result. Being able to grow your own organic produce and consume it on a daily basis is perhaps one of the biggest joys and blessings of life. As I am growing older, I am understanding this more and more. It has also made me question the availability of spinach in monsoons, or why people do not eat seasonally but prefer what the West seems to be loving, such as the recent avocado craze. Do we really need it in India?

Food and culture are so entwined. I am trying to start from my own roots, and I have realized how little I know of my own Assamese food. I make it a point to visit home as often as I can, talk to my aunts and uncles who grow their own food. And who do you think accompanies me during such trips? My father of course! 🙂

Cooking for people gives me joy beyond words. It is in fact, my meditative therapy.

I connect the most with people who like to cook and understand food like I do. My best friends are people who love to cook for themselves and their loved ones. I respect people who can fix themselves and their friends with a snack or a meal. Whenever people eat my food, they comment on how lovely it is and how they couldn’t stop themselves from gobbling it all up, feeling almost guilty. Another source of monumental inspiration! And I can’t help but smile.

So I have started. Started my own tiny space in this big web of information, sharing what I know and learning from the community.

The internet does give a lot of motivation to do something on your own, and so do a lot of people around you. I am not quitting my job or taking any rash decision here, but I am just trying to balance my love for cooking with my daily, mundane life, which I also enjoy. It is a simple thing and a not-so-simple effort. But since I am loving it so much, I shall continue. To me, this is just the beginning.

Desi Chinese Food Recipe – Sesame Chicken You Can’t Say No To

We all love Chinese food! In India, Chinese is cooked in unique ways and it leaves us wanting for more. This recipe is inspired by the various versions of Chinese food I’ve tasted across states and even countries! It is easy to make, power packed with flavors and will surely leave you wanting for more.

 INGREDIENTS

  • 500 gms boneless chicken
  • Two onions, cut into large pieces (see video)
  • 8 cloves of garlic, crushed
  • 1 capsicum, diced
  • 1 tbsp roasted sesame seeds
  • 5 whole green chillies
  • 1/2 cup soy sauce
  • 2 tbsp cornflour
  • 1 tbsp pepper powder
  • 1 cup water
  • Salt to taste
  • chopped spring onion leaves, for garnish.

PROCEDURE

Before cooking:

Dip the chicken pieces in cornflour with a little water and fry it in oil. Keep it aside.

Process:

  • Add oil to a pan.
  • Add the crushed garlic.
  • Put in the onions and fry for 3-4 minutes.
  • Add the chopped capsicum and cook.
  • Time to add the fried chicken.
  • Add soy sauce and sprinkle some sesame seeds over it.
  • Add salt and pepper.
  • Pour in some cornflour mixed with water for the desired consistency.
  • Cook till the chicken is tender.
  • Garnish with fresh spring onion leaves.

Crispy & Spicy Honey Chicken

What is a get-together or a party without some amazing snacks to go with, right? And what can be better than some Chinese food at home?

As an ode to how much we all love house parties, here is a quick Chinese food recipe you can whip up. A honey chicken snack that you can prepare for your own guest party for a weekend, and delight your friends and family!

Preparation time – 10 minutes

Cook time – 20 minutes

Serves – 2-3

  • Shredded boneless chicken, 500 gms
  • 5 tbsp honey
  • 1 tbsp sugar
  • 2 tbsp cornflour
  • 3 tbsp soy sauce
  • 2 tbsp vinegar
  • 8 garlic cloves, sliced
  • 1 tbsp chopped ginger
  • 1 tbsp sesame seeds
  • 1 tsp black pepper powder
  • Chopped spring onion leaves for garnish
  • Peanuts for garnish
  • Salt to taste [/ingredients]

  1. In a glass bowl, add salt, pepper, and cornflour to the chicken, mix it well and keep it aside.
  2. Take another bowl and mix sugar, ginger, garlic, soy sauce, honey, and vinegar together and set it aside.
  3. In a pan, heat oil and fry the chicken pieces.
  4. Once crisp enough, add the sauce already made and mix well.
  5. Cook till chicken is tender.
  6. Garnish with chopped spring onion leaves and peanuts. [/directions]

Life can be stressful sometimes. Struggle is real for everyone and we all have our own ways of dealing with it. For me, it’s food. With so much happening around us and advertisements always luring us into delicious stuff around us, we also need to be careful about the eating choices we make. Indulging in comfort food can be the biggest stressbuster for many. But it needs to be moderated from a health perspective.

The good news is that healthy can also be tasty! And can also be achieved at reasonable costs if done well. A lot of us are also increasingly realizing the benefits of healthy and clean eating habits, coupled with some sort of work out. A healthy oats recipe with less oil, blended with vegetables and subtle spices and a beautiful snack. Here’s what you’ll need.

INGREDIENTS

1 tbsp refined oil

1 onion, chopped

1 tsp fresh ginger-garlic paste

1/2 cup chopped capsicum

1/2 cup chopped carrot

1 cup chopped spinach

1 cup rolled oats

2 potatoes, boiled and mashed

1/2 cup breadcrumbs

1/4 tsp cumin powder

Salt to taste

PROCEDURE

  • In a pan, heat oil. Fry the chopped onions in it for about two minutes.
  • Add the fresh ginger-garlic paste to the onions and fry till the rawness disappears.
  • Next, add the chopped vegetables to this mixture – capsicum, carrot, and spinach.
  • Fry the vegetables in the onions till done.
  • Add oats to this and fry for 2-3 minutes.
  • Transfer this mixture to a bowl and let it cool.
  • Once cool, add 2 mashed potatoes to the oat mixture.
  • Add the breadcrumbs and mix well.
  • Knead this with some water and make tikkis out of it.
  • In a non-stick pan, add 1 tbsp of refined oil. Once hot, fry these tikkis on both sides till done.
  • Enjoy hot with green chutney.

Shakshouka – The Best Egg Dish in The World…Literally!

Shakshouka is a delicious middle eastern egg recipe cooked with a tomato sauce base and some mild spices. It is extremely simple to make and will instantly become your favourite choice for a meal. It is a global favourite and undoubtedly one of the best egg recipes in the world. You can have it all for yourself right here!

INGREDIENTS

4 medium tomatoes, diced

3 eggs

1 tbsp crushed garlic

1 onion, diced

1 tbsp hot sauce

1 tbsp oil

1/4 tsp pepper

Salt to taste

PROCEDURE

  • Heat oil in a pan. Fry the onion until golden brown.
  • Add the crushed garlic and fry for a few seconds.
  • Add the chopped tomatoes and mix well.
  • Let the tomatoes cook for 10-15 minutes till a thick sauce is formed. Keep stirring in breaks.
  • Add hot sauce, salt, and pepper to the sauce.
  • Once the sauce is completely ready and all the tomatoes have melted away, break open three eggs gently into the pan.
  • Now let the eggs cook over low heat. You can do the eggs as you like it. I like my yolks a little runny. 😉
  • And that’s it! It’s done. Sprinkle some coriander on top and serve!

Cottage Cheese Panini Sandwich – The Ultimate Vegetarian Breakfast Hack

We all love sandwiches every once in a while. This recipe is the perfect vegetarian snack for a hungry soul. It is an excellent option for breakfast as it gets ready in a matter of minutes! Here is a paneer sandwich recipe.

Here is my version of an Indian Panini Sandwich exclusively for you guys.

INGREDIENTS

200 gms cottage cheese, mashed

1 onion, finely chopped

2 tbsp heavy cream

2 tbsp tomato ketchup

2 tbsp butter

1/2 tbsp cumin powder

1/2 tbsp turmeric powder

Dried Fenugreek leaves for garnish (Methi)

1 tbsp grated cheese

Salt

PROCEDURE

  • Heat butter in a pan.
  • Add the chopped onions and fry until brown.
  • Add the cottage cheese and fry.
  • Add salt, cumin powder and turmeric.
  • Pour in the tomato ketchup and cream and mix well.
  • Set this mixture aside.
  • Take a kulcha bread and add this mixture on top, and put another kulcha bread on top.
  • Cut it in half. Enjoy it grilled or soft.

Spanish Omelette – The Ultimate Breakfast Recipe

Spanish omelette, I feel, is one of the best ways to satisfy one’s love for eggs. And it is just a perfect breakfast recipe that is filling and healthy at the same time. There are different variants of this classic Spanish dish and you can have your own rendition as well. The simplest one mostly consists of potatoes only. I have added some vegetables as well for a twist. Here is the recipe for you to try out to welcome the winter.

INGREDIENTS

4 eggs

2 potatoes, diced

1 onion, diced

2 tbsp vegetable oil

1/4 cup chopped capsicum

1/4 cup boiled sweet corn pellets

1/4 cup chopped tomatoes

1/2 tsp garlic powder

1/2 tsp pepper powder

Salt to taste

PROCEDURE

  • Heat oil in a pan. Once hot, add the onions and fry for about a minute.
  • Add the potatoes and cook this till potatoes are soft.
  • In a glass bowl, break four eggs.
  • Add the fried potatoes to the eggs.
  • Now add the capsicum, sweet corn and tomatoes to this.
  • Add garlic powder, salt and pepper.
  • Mix everything gently with a spoon without mashing the potatoes.
  • Let this rest for about 10 minutes.
  • Take a non-stick pan and pour in the omelette mixture.
  • Cook one side of the omelette for two to three minutes.
  • Now put a plate on top of the pan and invert the omelette. Put the uncooked side onto the pan and cook the other side for another two to three minutes.
  • Serve hot.

Crunchy Toasted Sandwich With Mushroom & Caramelised Onion

Here is a deliciously simple toasted sandwich recipe with multi-grain bread, mushroom and caramelised onions. Along with its healthy ingredients, it is also quite filling. So if you are a sucker for sandwiches, try this wholesome one which will barely take you 20 minutes to prepare.

Try it out yourself and I promise it will not disappoint.

Here’s the recipe:

INGREDIENTS

2 pieces of multi-grain bread

2 tbsp olive oil

1 cup chopped mushrooms

1/4 cup broccoli

1 tbsp crushed garlic

1 medium onion, chopped

Cheese spread

Lettuce

Salt to taste

1/4 tsp pepper

PROCEDURE

  • Heat olive oil in a non-stick pan. Add garlic. Fry for a few seconds and add the onion.
  • Fry the onion for a minute and set it on one side, keeping the other side of the pan free.
  • While the onion cooks, add the mushroom and broccoli on the other side of the pan and let it cook.
  • Add salt and pepper to the mushroom and broccoli and mix well while the onion is cooking on the other side.
  • Stir both the sides separately, till the onion is caramelised and the vegetables are cooked.
  • Take this off and on the same pan, toast two pieces of multi-grain bread till crunchy.
  • On a piece of bread, apply a layer of your favourite cheese spread.
  • Next, add a lettuce leaf on top. After this, add the caramelised onion, followed by the mushroom and broccoli fry.
  • Add another lettuce leaf on top and cover it with another bread piece.
  • Your crunchy sandwich is ready!

How to Make a Gloriously Gratifying Chicken Sandwich

Today’s Slurrp recipe is a sinful and gloriously gratifying chicken sub sandwich. Do not go by this simple name as ingredients also include crunchy vegetables, some sweetness and of course, cheese!

This is a non-grilled version and can take a little bit of time, but the end result will be worth the small effort. Here’s the recipe for one complete footlong sub sandwich.

INGREDIENTS

1 whole garlic loaf

2 tbsp olive oil

1 tbsp minced garlic

1 onion, diced

1 cup chopped mushroom

1 cup chopped capsicum

1/2 cup tomato ketchup

2 chicken sausages, cut into small pieces

2 cups chopped lettuce

2 tbsp mayonnaise (keep some extra for layering the base of the bread)

1 tbsp mustard

1/4 tsp salt

1/4 tsp pepper

PROCEDURE

  • Heat olive oil in a pan and fry the sausages until crisp. Set them aside.
  • Next, fry the onions with the leftover oil. Add garlic and fry for a few more minutes.
  • Add the mushroom and let it cook for about two minutes.
  • Add salt, pepper and tomato ketchup. Stir well and set it aside.
  • In a large bowl, add chopped capsicum, lettuce and the cooked mushroom and onion.
  • To this, add mayonnaise and mustard and mix well. Set it aside.
  • Now take a garlic loaf and cut it open. Add mayonnaise on the bread and then layer it with the mushroom and lettuce mix.
  • Add the fried chicken sausage pieces on top.
  • As a final topping, add 4-5 cheese slices and your sandwich it ready!
