I agree that summers do not give us too many vegetable options. But the good news is that the minimum availability can be made extremely delicious with some very simple hacks. Today’s summer recipe is with bhindi or okra as the hero ingredient. Also known as ladies finger, bhindi is a very popular summer vegetable in India. I have started growing fond of okra over the years because of its uniqueness in taste and texture.

The most common way to eat bhindi in India is a nice stir fry with tomato, onions and the basic spices. The crispy or karari bhindi is also a huge hit in North India. Today’s bhindi recipe that I am going to be sharing with you is called malai masala bhindi. This special and extremely tasty recipe uses cream, curd and a lot of other Indian spices.

Slurrp pro tip: While cutting the bhindi, make sure you soak them first in water for about 15 minutes. This will enable you to get rid of the sliminess while cutting the bhindi.
