Ingredients

For the baked chicken:

  • 700g boneless chicken thighs
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp dried Italian herb mix
  • 1 tbsp paprika
  • 1 tbsp salt
  • 4 tbsp extra virgin olive oil

For the sauce:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 2 cups finely chopped onions
  • 1 tbsp minced garlic
  • 2 cups hot water
  • 1 cup fresh cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • 1 tsp black pepper powder
  • 3-5 Italian basil leaves, chopped 

Directions

  1. Prepare the Baked Chicken:
    • Preheat your oven to 200°C (390°F).
    • In a small bowl, combine garlic powder, onion powder, dried Italian herb mix, paprika, and salt to make a spice blend.
    • Rub the spice blend evenly on both sides of the chicken thighs, then drizzle with extra virgin olive oil.
    • Place the seasoned chicken thighs on a baking tray lined with parchment paper.
    • Bake in the preheated oven for about 1 hour or until the chicken is cooked through and golden brown.
  2. Make the Creamy Sauce:
    • In a large skillet, heat extra virgin olive oil and butter over medium heat.
    • Once the butter has melted, add the finely chopped onions to the skillet. Sauté for about a minute until they start to soften.
    • Add the minced garlic to the skillet and continue sautéing until the onions turn golden brown and the raw aroma of garlic fades.
    • Deglaze the skillet by adding hot water, scraping up any browned bits from the bottom of the pan.
    • Pour in the fresh cream and stir well to combine. Allow the mixture to come to a gentle boil.
    • Season the sauce with salt and black pepper powder according to taste.
    • Stir in the grated Parmesan cheese until it’s melted and fully incorporated into the sauce.
    • Add the chopped basil leaves to the sauce and give it a final stir.
  3. Combine and Serve:
    • Once the baked chicken is done, transfer it to the skillet with the creamy sauce.
    • Gently coat the chicken pieces with the sauce and allow them to simmer together for an additional 5-10 minutes, ensuring the chicken is heated through.
