  • 2 tbsp sesame oil
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • 2 cups cabbage (cut into equal-sized bites)
  • 1 cup carrots (sliced)
  • 1 cup baby corn (sliced)
  • 1 red bell pepper (sliced)
  • 1 green capsicum (sliced)
  • 1 cup button mushrooms (sliced)
  • 1 large onion (sliced)
  • 800ml hot water
  • Salt to taste
  • 3 tbsp dark soy sauce
  • 1/2 tsp black pepper powder
  • 1 tsp chili flakes (adjust as per preference)
  • Cornflour slurry (4 tbsp cornflour mixed with 8 tbsp water)
  • A handful of spring onion greens (for garnish)
  • Sesame seeds (for garnish)

Directions

  1. Prep the vegetables: Begin by chopping the cabbage, carrots, baby corn, bell pepper, capsicum, mushrooms, and onion into bite-sized pieces. Keep them ready.
  2. Heat the oil: In a large wok, heat 2 tablespoons of sesame oil over medium-high heat.
  3. Sauté the aromatics: Once the oil is hot, add finely chopped ginger and garlic. Stir-fry for a few seconds until fragrant.
  4. Cook the vegetables: Add the cabbage, carrots, and baby corn. Stir-fry on high heat for about 1 minute. Then, add the red bell pepper, capsicum, mushrooms, and onion. Continue to stir-fry for another minute.
  5. Season: Sprinkle salt over the vegetables and mix well.
  6. Add hot water: Pour in 800ml of hot water and bring it to a boil.
  7. Thicken the sauce: Once the mixture comes to a boil, add 3 tablespoons of dark soy sauce and the prepared cornflour slurry. Stir continuously until the sauce thickens to your desired consistency.
  8. Finish with spices: Add 1/2 teaspoon of black pepper powder and 1 teaspoon of chili flakes (or to taste). Mix everything well.
  9. Garnish and serve: Turn off the heat and garnish with sesame seeds and chopped spring onion greens. Serve hot with boiled rice, fried rice, or noodles.
