Penne With Spinach and Corn

Making a steaming pot of delicious penne pasta cannot get easier than this. I absolutely love this penne with spianch and corn recipe. It is so easy and requires almost zero effort! Just plonking all the ingredients straight into one pot and we have a pasta dish of our dreams.

You can make this penne with spinach and corn for a quick meal fix. It is also customisable, as this recipe remains a very basic one. You can add your choice of herbs, cheese or type of pasta too. However, penne works best in a situation like this (personal recommendation). However, you can go with what you have (fusilli is a winner here too).

Ingredients in this Penne with Spinach and Corn Recipe

This recipe requires just a few basic ingredients, with spinach and corn being the two stars of the show. Ingredients are few but each one of them plays a crucial role in bringing the dish together.

The base of the pasta uses milk. If you want to skip the dairy, you can opt for coconut milk. Or if you want to take it a notch up higher, you can add cream. I like to add milk as it keeps the base lighter and does not make it too heavy to consume.

The cheese is absolutely essential in the end. You can use any cheese of your choice, and as much as you want. As you can probably make out from the video, I have not gone overboard with any ingredient here, even the cheese. Because I wanted to make it a simple, practical recipe which is not overtly indulgent. Having said that, if you are making it for a special night, please be generous with the cheese if you feel like it.

I have gone with normal cheddar here. You can use any kind of cheese. A combination of sharp cheddar and mozzarella works best in this recipe.

Here’s a look at the recipe.

Preparation time – 15 minutes

Cook time – 30 minutes

Serves – 4

[ingredients title=”Ingredients”]

  • 1 tbsp extra virgin olive oil
  • 15 g butter (1 tbsp approx.)
  • 12 g finely chopped garlic (3 tsp approx.)
  • 70 g finely chopped onions (2/3 cup approx.)
  • 60 g uncooked corn kernels
  • 120 g chopped spinach
  • 300 ml milk
  • 130 g penne pasta
  • 26 g toasted walnut paste (see directions)
  • Salt to taste
  • 2 tsp black pepper powder
  • 80 g grated cheese [/ingredients]

[directions title=”Directions”]

  1. Make the toasted walnut paste and keep ready. To make it, toast some walnuts on a pan till they are golden and crunchy. Cool them and grind them with a little bit of water till a fine paste forms. Keep this ready before you start making the pasta.
  2. Heat olive oil in a pot alongside butter. Keep the flame at low.
  3. Once the butter melts and assimilates with the olive oil, add the finely chopped garlic. Let the garlic simmer in the oil at low heat for a few minutes till it releases its aroma and flavours into the oil.
  4. Add the onions and increase the heat to medium. Stir for 3-4 minutes or till the onions are cooked and turn translucent.
  5. Add the corn kernels and cook for five to six minutes till they are nice and soft. Uncooked corn kernels do not take too much time to cook.
  6. Once the corn is cooked, add the spinach and stir it in for another two minutes.
  7. The spinach will wilt quickly. Pour the milk into the pot, alongside the penne and the walnut paste.
  8. Let the milk come to a boil. Then reduce the flame to low and cook covered till the penne is completely soft.
  9. Take lid off and add grated cheese. Mix and reduce till a thick consistency. At this point, you can add some fresh herbs like basil.
  10. Serve hot alongside some bread on the side. Enjoy! [/directions]

Macaroni and Cheese Without Milk & Flour

Macaroni and Cheese is a classic recipe and everyone’s favourite. There are a thousand ways to make this recipe and this is mine. I no way do I claim this recipe to be an authentic version. This macaroni and cheese recipe is very personal and I have been making this for as long as I can remember. I usually skip the milk and the flour in this recipe, as I feel it makes the entire meal way too heavy. For a home cooked meal, I like to keep it simple, and use a little bit of cream and hot water as the binding agent, and there is absolutely no compromise on the amount of cheese!

macaroni and cheese

What makes this macaroni and cheese recipe so special?

There are several reasons why this macaroni and cheese recipe is special.

-Probably the easiest mac and cheese recipe there is!

It cannot get easier than this. This recipe is made straight in a skillet and there is no oven needed whatsoever. You can always put some extra cheese on the top and bake it until golden brown to make it a little more special. But if you want to skip that part, it is fine too!

-The best topping (other than cheese)

The second best part about this macaroni and cheese recipe is that delicious topping of panko breadcrumbs, seasoned with salt and pepper. This topping makes a world of a difference to the flavour profile and elevates this recipe to a whole new level. It is a must if you make this, as the recipe is otherwise pretty simple.

macaroni and cheese

Good quality macaroni is a must!

The market has a wide variety of macaroni, but this recipe requires for one that is sturdy and does not melt too quickly. Go for a brand that has superior quality elbow macaroni, and skip the flimsy ones that you might make for an Indian style macaroni pasta. This is because the macaroni will cook in the base of cream and hot water, and it needs to maintain its shape and not disintegrate into the sauce. Clumpy or mashed macaroni is a nightmare when it comes to a good macaroni and cheese.

macaroni and cheese

Here’s a look at the recipe.

Preparation time – 15 minutes

Cook time – 35-40 minutes

Serves – 4

[ingredients title=”Ingredients”]

  • 1 cup breadcrumbs
  • 1/4 tsp black pepper powder (for flavouring the breadcrumbs)
  • 1 cup elbow macaroni
  • 2 tbsp cooking oil (any neutral oil like Sunflower/Canola etc.)
  • 2 tbsp butter (25 grams)
  • 1 cup finely chopped onions
  • 3 medium cloves of garlic, finely chopped
  • 6 cups of boiling hot water
  • 3 cups elbow macaroni
  • 1/2 cup fresh cream
  • 1/2 tbsp freshly ground black pepper powder
  • 1/2 tsp Oregano
  • 1/2 tsp chilli flakes (optional)
  • 1 tsp dried mix herbs (if any)
  • Salt to taste
  • 150 g grated processed cheese [/ingredients]

[directions title=”Directions”]

  1. Heat a skillet and add the breadcrumbs. Keep stirring the breadcrumbs on medium to low flame till they start to turn golden brown. Do not burn.
  2. Season the breadcrumbs with salt and black pepper powder. Set aside for later.
  3. Heat oil in a skillet or pot. Add the butter and mix the two fats. Add the chopped onions and saute till they turn aromatic and slightly golden brown.
  4. Once the onions are soft, add the garlic and saute till it assimilates with the oils and the onion.
  5. Once the onions and garlic is cooked and do not contain any rawness, add the hot water and the cream. Mix well and let it come to a boil.
  6. Add the elbow macaroni into the boiling base and stir well.
  7. Season with salt, black pepper powder, and the herbs. I like to add chilli flakes for some heat, you can skip it if you do not want it.
  8. Once everything is well combined, cover and let the macaroni cook on medium to low flame for 10-15 minutes (or till soft). Keep checking from time to time to prevent it from burning.
  9. Take lid off and stir till you get a creamy consistency. Add in the rest of the cream and cheese and mix well.
  10. Serve hot with a generous topping of the toasted breadcrumbs. Enjoy! [/directions]

Happy cooking!

Creamy Pesto Pasta

If there is one kind of pasta I truly love, can eat everyday and basically never get bored of, it’s this creamy pesto pasta. I love it so much that I started growing Italian basil in my garden so that I never run out of basil. And Italian basil grows like a weed so your girl has been very happy! And I am finally sharing the recipe.

This pasta requires the least amount of cooking. You just have to boil your spaghetti and that’s it! The rest of the magic happens in the blender and the result is one of the most delicious creamy pesto pasta that oozes comfort and happiness. This vibrant pasta recipe is made with my in-house pesto sauce that is EXTRA creamy. This pesto sauce has the most silken texture and it is super rich and indulgent. Also this pesto sauce is multi-purpose. You can lather it up on your sandwiches, enjoy it as a luxurious dip or add it to anything you’re eating (I love it on my morning omelette). This pesto stays well for upto three days so make sure you make extra.

creamy pesto pasta

There are a plethora of reasons why this recipe is my ultimate favourite. It’s easy, involves no cooking (except boiling the pasta) and the flavours always make my heart skip a beat. I always eat this pasta with my eyes closed, because I’m too busy relishing the beautiful flavours once I put it in my mouth. I might have also made some inappropriate noises🤤 It’s just so good! This creamy pesto pasta is one of the best examples of how fascinating minimalistic cooking can be. Source the best ingredients and have a remarkable meal in 20 minutes. If this is not a good life, I don’t know what is.

creamy pesto pasta

creamy pesto pasta

Pesto refers to any sauce with a nut and a herb. So pesto can be any combination of a really flavourful herb and a nut that goes well with it. The most common kind of pesto is Italian basil with pine nuts, but you can try and experiment with any combination. I particularly love arugula or rocket leaves as the base in my pesto, and it tastes absolutely stunning. This creamy pesto sauce is a take on the most classic combination of Italian basil and pine nuts. Because I am in India and pine nuts are not local to us at all, I have used toasted almonds. You can also use toasted walnuts if that’s available with you.

creamy pesto pasta

The speciality of this creamy pesto pasta is that it is extra creamy! This is because of the ratio of basil to almonds and cheese. Because this pesto sauce just has a few ingredients, it is of utmost importance that you source the best quality possible. Make sure you use very good quality extra virgin olive oil, Parmesan cheese and of course, fresh Italian basil. The rest of the ingredients is just salt, almonds and garlic, which can be easily found in any pantry.

Roasted Bell Pepper Pasta

So the other day I had to use two bell peppers that were in my fridge. All of us at home wanted to eat some pasta so I thought of combining the peppers with some spaghetti. But it had to be interesting too. So I charred one each of red and yellow bell peppers on my gas stove, along with two tomatoes. I removed the seeds and the char and blended it all to a bright paste with salt. I started cooking the pasta in lots of salt and water by this time. I then put some olive oil and butter in a pan in very low heat, added lots of garlic and allowed it to cook together. The garlic released its oils into the butter and EVOO, filling my kitchen with an appetising aroma. I then added the blended roasted bell peppers and tomato sauce and cooked it on low flame will oil started to accumulate on the sides. And in went the al dente pasta, along with salted pasta water (the secret weapon to any great pasta).

roasted bell pepper pasta

roasted bell pepper pasta

For this recipe, I didn’t have any fancy cheese or fresh herbs, so I added whatever I had – Amul cheese blocks grated on top and dried herbs (it was the second week of Lockdown). Chilli flakes is a must! Well, all I can say is we licked everything off our plates and the effort was worth it. I hope you try this recipe to see what I’m talking about. Also, special thanks to the husband who has been helping me with all the pictures. Be prepared to see some of me in the coming days 😀

roasted bell pepper pasta

Here’s the recipe:

Preparation time – 30 minutes

Cook time – 30 minutes

Serves – 4

[ingredients title=”Ingredients”]

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 medium sized tomatoes
  • 300 g spaghetti
  • Salt to taste
  • 3 tbsp extra virgin olive oil
  • 20 g butter (1 1/2 tbsp approx)
  • 8-10 garlic cloves, thinly sliced
  • 1 tbsp dried basil/fresh Italian basil leaves
  • 1 tbsp dried Oregano
  • 2 tsp chili flakes
  • 1 tbsp black pepper powder
  • Fresh herbs, if any (basil/cilantro)
  • Grated cheese [/ingredients]

[directions title=”Directions”]

  1. Wash the bell peppers tomatoes and pat them dry with a kitchen towel or cloth. Rub oil on them. Char them directly on fire till they blacken. Let them cool down.
  2. Once cooled down, remove the blackened parts of the bell peppers and tomatoes. Don’t worry if a few tidbits are left. De seed the bell peppers and roughly chop them with a knife. Do the same with the tomatoes.
  3. Blend all the vegetables together to a fine and thick paste.
  4. Heat water in a wide mouthed pot. Allow it to boil. Add enough salt to it so that it tastes saline.
  5. Cook the spaghetti in this pot as per package instructions till al dente. Reserve some of this hot and starchy pasta water for later use.
  6. While the pasta is cooking, start the sauce simultaneously. Heat olive oil and butter in a skillet on very low heat. Add the thinly sliced garlic and let it cook slowly. Let the garlic release its aroma and juices into the oil.
  7. Once the butter starts to brown and the flavour of the garlic is assimilated into the oil, add the blended bell pepper and tomato puree. Stir on high heat for two to three minutes.
  8. Season with dried basil, oregano, salt, black pepper powder and chilli flakes. Mix well.
  9. Cover and cook on low flame for seven to eight minutes till the oil starts to release from the sides.
  10. Add the cooked spaghetti into the sauce along with a ladle or two of reserved pasta water. Mix well on low flame till it all comes together. Add more starchy water if required. It helps keep the noodles soft and glazy.
  11. Garnish with any fresh herbs of choice like basil, parsley or cilantro.
  12. Garnish with grated Parmesan cheese (or cheddar if you’re out of Parmesan) [/directions]

Lemon Butter Garlic Pasta

Whether you’re feeling drained to cook, or if you have very little time in hands, this lemon butter garlic pasta is a saviour. With a handful of ingredients and really less cooking time, this lemon butter garlic pasta has been a regular at my home this lockdown. Needless to say, it’s super simple to make, and tastes refreshing and delicious.

This lemon butter garlic pasta is simple to make, but it is essential to follow the little techniques that make this recipe stand out. I have explained it in detail in my video. These techniques matter a lot in getting the recipe right and make it taste like gourmet Italian food. For such a simple recipe, it is absolutely essential that you pick the choicest of ingredients. For instance, make sure you use high quality olive oil and go for a good brand of spaghetti. The amount of cheese required in this recipe is not too much, but if you do use cheese, Parmesan is the best option. I did not have any Parmesan since we are in lockdown, so I went ahead with just a touch of cheddar. But please use Parmesan if you have it.

Tips To Make This Lemon Butter Garlic Pasta Taste Gourmet

Here are a few tips you should follow to make sure you make that perfect plate of spaghetti for yourself.

  • Cook spaghetti as per package instructions till al dente

For this recipe, we cook the spaghetti first and once it’s almost done, we start making the lemon butter garlic sauce and mix them together in the last step. First tip is to make sure you buy good quality spaghetti. I personally love Borges that we get in India (not sponsored) because it really holds its shape and also tastes smooth. Del Monte also has some good range of spaghetti that you can try (not sponsored).

The idea is to cook the spaghetti till its al dente, or has that perfect bite. Each brand of pasta has its own cooking instrcutions, so make sure you follow them when you cook the spaghetti, and you will be good to go.

  • Add salt to pasta water

This little hack will elevate the level of your pasta from average to excellent! There is no bigger heartbreak than biting into pasta that has all the flavours in the sauce, but really a bland bite in those spaghetti strands. Sounds like a nightmare to me! It’s important to add a lot of salt to the water in which you boil the pasta because you do not want your spaghetti to be bland. In order for the spaghetti strands to absorb the flavour of the salt, it needs to cook in water that is almost as saline as sea water. This is because it does not absorb all of it, but just enough to flavour the spaghetti throughout. Adding salt in the water you boil the spaghetti in is the only time you will flavour the spaghetti so this step cannot be missed.

  • Pasta water makes all the difference

Have you ever wondered how restaurants get that perfect glaze over every strand of spaghetti that you order? While olive oil and butter play a major role, chefs also add a magic potion in the end while tossing the pasta. It’s the reserved pasta water. Reserved pasta water is nothing but the water in which you boil your pasta. This pasta water absorbs a lot of starch from the dry pasta and the addition of salt in it also helps flavour the final pasta sauce. So make sure you save two to three ladles of that starchy, saline and boiling pasta water to add that extra dose of magic to your dish.

  • Keep flame at low for the sauce

The sauce for the lemon butter garlic pasta is super basic and uses just a few ingredients. To get the most out of the sauce, it’s important to cook it at optimal temperatures. The flame should be kept at low throughout the process of making the pasta sauce as it’s very easy to burn the subtle ingredients or the oil. The flavour of the garlic needs to get infused into the butter gradually. The sauce is cooked till it turns a little brown and toasty, without any hint of burn. That’s when you know you have the perfect browned butter sauce with garlic and lime.

lemon butter garlic pasta

Preparation time – 15 minutes

Cook time – 30 minutes

Serves – 3

[ingredients title=”Ingredients”]

  • 300 g dried spaghetti
  • 3 tbsp finely chopped garlic
  • 1 tsp chili flakes
  • 1 tbsp lemon/lime zest
  • 2 tbsp lemon/lime juice
  • 3 tbsp butter
  • 6-7 fresh Italian basil leaves
  • 2 tbsp fresh cilantro
  • 3 tbsp extra virgin olive oil
  • Grated Parmesan cheese for garnish
  • Salt to taste [/ingredients]

[directions title=”Directions”]

  1. Fill a pot with water. Let it come to a boil. Add a tablespoon of salt and mix. Add the spaghetti and cook as per package instructions.
  2. Save two to three ladles of the pasta water.
  3. Once the pasta is almost done, cook the sauce simultaneously.
  4. Heat butter and olive oil in a skillet. Keep the flame at low. Before it heats up, add the finely chopped garlic. Give it a light mix, allowing the garlic to sweat. The oil should get infused with the aroma and flavours of the garlic. Let it stay like that for two to three minutes till the butter acquires a brown colour.
  5. Add the chili flakes and lemon zest.
  6. Drain the pasta and add it to the skillet. Add a ladle of the reserved pasta water (or as required). Keep the flame at low.
  7. Give the pasta a good toss. Garnish with fresh Italian basil leaves and cilantro (optional).
  8. Serve on a plate. Grate some cheese on top. Garnish with more basil. Serve immediately. [/directions]

Fettuccine Alfredo With Broccoli & Cherry Tomatoes

Alfredo sauce is love! Anything with Alfredo in it makes life better. Don’t you agree?

But usually, Alfredo makes people think of a thick and heavy sauce that makes you full till your neck. Fear not! This fettuccine alfredo is light, yet creamy. Believe it or not, a major part of the sauce is the reserved pasta water.

fettuccine Alfredo

fettuccine alfredo

It is one of the simplest dishes that comes together in 20 minutes tops, and it tastes heavenly even in its most basic form. Unlike most Alfredo recipes, the sauce for this one is quite thin, yet super luxurious. The secret is the pasta water and very little cream. So what you end up eating is a very light pasta that does not leave you gasping for breath. It is not overloaded with cream or cheese, but tastes just beautiful in all its simple glory. I went ahead and added some broccoli and cherry tomatoes.

You can seriously throw in whatever vegetables or protein you like. If you get the basic technique right, there is no way this is going to taste any less delicious. Or maybe you can come up with your own version and let me know about it someday!

So let’s get straight into the secret of this delightful pasta dish.

Preparation time – 20 minutes

Cook time –  30 minutes

Serves – 3 people

[ingredients title=”Ingredients”]

  • Fettuccine pasta, 300 gms
  • Steamed broccoli florets, 300 g, steamed for five minutes.
  • Cherry tomatoes, 200 g
  • Garlic, 3 cloves
  • 30 g butter
  • 3 tbsp extra virgin olive oil
  • 3 tbsp fresh cream
  • 1/2 cup Italian Basil leaves
  • 1 tbsp pepper
  • 100 g grated Parmesan cheese
  • Salt to taste [/ingredients]

[directions title=”Directions”]

  1. Boil water in a wide pot. Add two tablespoons of salt to the water and let it bubble.
  2. Add the fettuccine pasta to the water and let it cook it is al dente (80% cooked). See the package for exact instructions.
  3. While the pasta is boiling, start making the sauce simultaneously. Heat olive oil in a pan. Keep the flame at low intensity.
  4. Throw in the butter and lightly stir, allowing the butter to melt softly and assimilate with the olive oil.
  5. Finely chop the garlic and add it to the olive oil and butter. The heat has to be low at all times so that nothing is burnt. What you want is to let the garlic and its juices get infused into the fat of the oils. Let this remain for five minutes.
  6. After five minutes of letting the garlic sweat into the oil, add one cup of boiling pasta water into the pan and stir. Let it come to a boil.
  7. Add the heavy cream to the water and keep stirring in low flame till you get a thick consistency.
  8. Throw in the fresh cherry tomatoes right before you add the al dente pasta into the sauce. Stir gently.
  9. Add the boiled pasta to this sauce and cook till it is completely softened. Keep adding more boiling pasta water as and when required.
  10. Once you get your desired consistency and the fettuccine is cooked completely, turn off the heat.
  11. Season with freshly ground black pepper powder.
  12. Put the steamed broccoli florets into the pan and stir.
  13. Garnish with grated Parmesan cheese and stir.
  14. Serve immediately with fresh Italian basil leaves as garnish. Enjoy! [/directions]

Linguine With Shrimps & Pistachio

Here is an easy pasta recipe with a twist. If you are a lover of shrimp, pasta and are bored of the regular variations, this linguine with shrimp and pistachio will be a welcome change.

pasta with shrimp

The inspiration for this recipe is from Jamie Oliver’s book – Jamie Cooks Italy that I purchased a few months back. It has the most delicious pasta ideas, and authentic ones at that! The idea of adding crushed pistachios to the pasta really intrigued me, and that’s how I adapted that idea to make this recipe. Cherry tomatoes are also a great addition and the freshness of lime juice just elevates it to just another level.

  6. Season with salt and black pepper powder. Make sure you do not add too much salt as the fettuccine will already have it.
  7. As the sauce gets slightly thicker, add the white wine and stir gently. At this point, add the fried prawns to the sauce.
  8. Cook this on medium flame till the sauce reduces to a beautiful consistency.
  9. Roughly chop some fresh basil and thyme and add to the sauce. Add the parmesan cheese to the sauce to make it thicker. If at any point you feel like the mixture is getting too thick, add some reserved salty pasta water.
  10. Once you have your desired consistency, turn off the stove.
  11. For plating, add some cooked fettuccine on the plate. Pour the shrimp sauce cooked in white wine on top. Garnish with fresh basil and parmesan. Serve hot.

Old School Shrimp Scampi for Dinner Under 15 Minutes

Okay, here’s the truth. This recipe actually gets ready in 15 minutes or less. Provided you cook the scampi and the pasta simultaneously of course!

shrimp scampi

What is scampi?

Scampi refers to a luxurious sauce that is made with garlic, butter, lime juice, and olive oil. This simple, yet exotic sauce is what makes everything that goes with it a clear winner! With just a handful of ingredients, scampi is a secret everyone should know when it comes to making amazing dinner recipes.

Shrimp scampi is all the more special because it has this beautiful and glazy butter garlic sauce infused into those juicy shrimps. Oh, my mouth is salivating at just the thought of it!

Follow the basic rules

I think everyone has their own version of shrimp scampi. Mine is a little different than the usual, and I have never been disappointed by it. There are some 101’s when it comes to making this extremely simple dish. while this recipe is super simple and has minimal steps, you also need to get each step right.

  • The garlic is the champion – Let’s start with the garlic. The most important step in this recipe is infusing the flavors of the garlic into the olive oil right in the beginning. You don’t want to burn the garlic or make it crispy in hot olive oil. You need to infuse the flavors emanating from the garlic into the olive oil. Also, olive oil does not have a very high smoking point. Caution needs to be exercised while cooking dishes with it so that the oil retains its aroma and taste. For this, I put the finely chopped garlic into the olive oil before even starting the stove, letting it cook slowly so that the garlic gets infused into the oil.
  • Perfectly cooked pasta – The second rule is obviously cooking the spaghetti to perfection. There is no universal rule to cook pasta right, it varies as per the product you are using. So make sure you follow the instructions in your package and cook the pasta in hot boiling water. The most common way is to cook the pasta till al dente (almost cooked, but not completely cooked) and then drain it. The rest of the cooking happens in the final pan.
  • NEVER overcook the shrimp – Shrimps cook super fast and overcooking them can make them chewy and hard. Here’s how you get the perfect shrimp – Always keep the tails on, because it has so much flavor! Second, wash and pat your shrimps dry with a paper towel so that there is no water on it. Third, marinate the shrimps with salt and black pepper powder and use your hands to mix it well.  Last and most important – cook each side in olive and butter for 30 seconds each. That’s it!
  • Simultaneous cooking – The sauce needs to be prepared while you cook the pasta on the side. This will make you utilize time in the best possible way like a ninja. Oh yeah!

Should I add salt to the pasta?

Yes, yes and a million times yes. This is such a crucial step for a good plate of pasta. You do not want the sauce to have all the seasoning correct, and the actual spaghetti strands to be bland!

The reason why you need to boil pasta in salty water is that that’s the only time you are going to actually season the pasta. The spaghetti needs to have its own flavor too, and adding salt during the boiling process can give that elevated feel to your recipe.

Preparation time – 15 minutes

Cooking time – 15 minutes

Serves – 2

[ingredients title=”Ingredients”]

  • 50 g spaghetti
  • 200 g shrimps, tail on
  • 4 tbsp extra virgin olive oil
  • 8 garlic cloves, finely chopped
  • 150 ml white wine
  • 1 tbsp chili flakes
  • 20 g butter
  • Juice of 1 whole lime
  • 1 tsp black pepper powder
  • Finely chopped fresh parsley for garnish
  • Salt to taste [/ingredients]

[directions title=”Directions”]

  1. Cook the spaghetti in a pot as per instructions in the package till al dente.
  2. Prepare the sauce simultaneously. For the sauce, pour olive oil in a pot and add the garlic in it. Put it on the stove in medium flame and stir for a minute. This is done so that the garlic does not burn, but instead, its flavor gets infused into the oil.
  3. Add the shrimps to this oil, and cook for three minutes each side.
  4. Once the shrimps are golden brown, pour in the white wine and give it a light stir. To this sauce, add chili flakes and butter. Season with salt and black pepper powder. Let it simmer till the sauce reduces to a thick consistency.
  5. Add some fresh parsley into the sauce and give it a light stir. Add the cooked spaghetti to this and give it a light stir.
  6. Turn off the stove and drizzle lime juice over the pan. Give it one last toss, garnish with some more parsley and serve![/directions]

I love my shrimp scampi with loads of chili, so I add quite a lot. The number of ingredients is so limited, and hence you can adjust them depending on what flavor or taste you like best.
