Tomato and Basil Soup
This tomato and basil soup is creamy, rich, delicious and feels like a warm hug. Especially great for winters, grab a big bowl of this soup and cozy up inside a blanket.

  1. Wash and clean the tomatoes.
  2. Heat water in a large pot and bring it to boil. Add the tomatoes in it and let them boil till slits start appearing on their skin. This should take about eight to ten minutes.
  3. Transfer the tomatoes to a bowl filled with ice cold water and let them cool completely.
  4. Once the tomatoes cool down, peel off their skin and chop them up.
  5. Blend the tomatoes to a paste in a blender.
  6. Heat olive oil in a pan. Add the finely chopped garlic and saute for a few seconds. Keep the flame at low so that the garlic does not burn. The idea is to infuse the oil with the flavour and oil released from the garlic.
  7. Once the raw aroma of the garlic disappears, pour in the blended tomatoes.
  8. Cook these tomatoes on medium to high flame till it starts to release its water content. Do this for around ten minutes. Keep stirring at regular intervals.
  9. Add the basil leaves and stir it in for another five minutes.
  10. Season with salt and pepper and mix well. Add in the slit green chilly. Cook the tomatoes till all the water releases from it and you’re left with a thick paste.
  11. Now add the boiling, hot water to it and stir.
  12. Add the cream and butter and give it one last stir or till you reach your desired consistency.
  13. Strain the sauce using a sieve. Check seasoning and add more salt if required.
  14. Garnish with some fresh basil leaves and serve hot.
