Mexican Tortilla Wraps With An Indian Twist

It is only recently that I have developed a love for authentic Mexican food. The reason why I love Mexican cuisine is that it’s is so healthy and fresh! I love the way they garnish everything with fresh and crunchy vegetables and herbs.

But getting good Mexican food is a challenge, especially in India. Though there are a few top notch restaurants in the cities, very few people might actually know of them.

This recipe was my attempt at trying Mexican food at home and fusing it with Indian spices. I hope you guys like it as it boasts of taste and health!

Here is my version of Mexican Tortilla Wraps with an Indian twist!

INGREDIENTS

For the chutney (Grind all this to a paste):

50 gms coriander leaves

3-4 garlic cloves

2 green chilies

Salt to taste

For the wraps:

2 tortilla wraps

1 cup chopped carrots

1 cup chopped mushroom

1 cup chopped green bell pepper

1 cup chopped broccoli

1/2 Tsp sugar

1 Tbsp oil

Salt to taste

1/2 Tsp black pepper powder

Processed cheese, grated

PROCEDURE

  1. In a pan, heat oil and fry all the vegetables – mushroom, broccoli, carrots, and capsicum.
  2. Add sugar to this and fry for a minute.
  3. Season with salt and black pepper.
  4. Do not overcook these vegetables, as you would want a slight crunch
  5. Cut the tortilla wrap into a half. Now take one-half of it and layer it with the green coriander chutney.
  6. Add the sauteed vegetables to this and garnish with some grated cheese.
  7. Close the wrap and grill it in a sandwich maker.
  8. Your grilled vegetarian tortilla wrap is ready!
